Chocolate Cardamom Overnight Oats

Looking for an energizing breakfast idea, then try these Chocolate Cardamom Overnight Oats. Cardamom is native to the Far East and has a wonderfully fragrant and exotic scent that tastes a bit spicy, citrusy, and herbal all at the same time. A little of this amazing spice goes a long way, and it can be used successfully in savory or sweet dishes. It pairs wonderfully with cinnamon and chocolate so it seemed like a great idea to use it to “spice up” the morning breakfast oats!  It is also wonderful for the digestive system as it has a decent amount of fiber content, and it provides manganese, good for your bones, and iron, good for oxygenating your body’s tissues.

Cacao is one of nature’s most potent antioxidant foods! Yea….a reason to eat chocolate!! Cacao has Vitamin C, iron ,and copper, to create healthy bones and blood, Omega 6s, and fiber to help digestion and keep you feeling full. It is also one of the number one food sources of magnesium which is a natural muscle relaxant (why women crave 1x a month at least:), crucial for bone health, and needed to build healthy, strong bones. Maca has a wonderful caramel, sweet sort of taste and when paired with cacao, it is a marriage made in heaven!!

    Chocolate Cardamom Overnight Oats
  • 1 cup quick cooking oats
  • 1 1/2 cups milk( used coconut milk)
  • 1 tsp maca powder
  • 3 tbsp cacao powder
  • 1/8 + 1/16 tsp cardamom powder
  • 3/4 tsp cinnamon powder
  • 1 tsp vanilla extract
  • 1 tbsp almond butter
  • 1 1/2 tbsp maple syrup
  • Chia Pudding
  • 1 cup milk(used coconut milk)
  • 4 tbsp chia seeds
  • 1 tbsp maple syrup
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon


    Stir oats and other ingredients together well and let sit for several hours or overnight. Add more milk if necessary. Pour into bowl and top with berries, nuts, and granola or layer in a jar with granola on the bottom and alternating layers of oats and chia pudding. Then top with a drizzle of almond butter, chopped pecans, and a few chocolate pieces.
    Stir/whisk chia mixture well. Then stir again after 5 min to keep chia seeds from sticking together. Let sit at least 30 min to thicken.
